The pinkest thing you will ever eat, and the taste of a Lithuanian summer. Cold kefir and beetroot, served with hot boiled potatoes on the side. No cooking if you buy cooked beetroot.
Method
Pour the kefir into a big bowl and stir in the beetroot. It turns bright pink.
Add the cucumber, spring onions, most of the dill and the salt. Stir.
Chill for at least 15 minutes. Add a splash of cold water if you like it thinner.
Ladle into bowls and top each with half an egg and the rest of the dill.
Serve with hot boiled potatoes on a side plate.
The contrast of cold soup and hot potatoes is the whole point. Do not skip the potatoes.
Eat it with: Hot boiled potatoes sprinkled with dill.
