Plantain looks like a big banana but you cannot eat it raw. Fried when ripe, it turns sweet and sticky. The riper the skin (yellow with lots of black), the sweeter it gets.
Method
Cut off both ends of each plantain, run a knife down the skin and peel it off.
Slice on a slant into pieces about 1 cm thick, or into small cubes.
Heat the oil in a frying pan over a medium heat, about 1 cm deep.
Fry the plantain in batches for 2 to 3 minutes a side, until deep golden brown.
Lift out onto kitchen paper and sprinkle with a little salt.
Green plantain is starchy, not sweet. Fry it thin for crisps, or boil it like potato.
Eat it with: Jollof rice, beans, or eggs for breakfast.
