First time?

If you like mashed potato, start here. Bhorta means mashed, and it is eaten in small amounts with rice and dal. The mustard oil is used raw, so it gives a sharp, peppery kick like wasabi.

Method

  1. Boil the potatoes in their skins until a knife slides in easily, about 15 minutes. Drain and peel while warm.

  2. Mash the potatoes in a bowl. Leave a little texture: it is not meant to be smooth.

  3. If you are using dried chillies, fry them in a dry pan for a minute until dark and crisp, then crumble them in.

  4. Add the onion, green chilli, coriander, salt and mustard oil. Mix it with your hands (the traditional way) or a fork, squeezing so the onion and chilli flavour the potato.

  5. Taste and add more salt or oil. Shape into a mound to serve.

Tip

Make it milder by taking the seeds out of the green chillies, or using just one.

Eat it with: Hot rice and masoor dal.
